I like this for lunch, It's a good way to get my kids to love eat vegetables... not only for lunch, anytime during a day as hunger strike, replacing the junk food....
Ingredients:
2 whole large boneless chicken breasts ~ bake or grill & diced
Lettuce leaves ~ rinsed, dried and torn into bite size pieces
1 tomato ~ seeded and diced
1 carrot ~ thinly sliced
1 onion ~ thinly sliced
Dressing:
3 tbsp olive oil
2 teaspoons sugar
1 clove garlic, minced
3 tbsp lemon juice
Salt and pepper (to your own taste)
Preparation:
Add all ingredients to a large bowl. Put dressing on salad immediately before serving...
